Pancake Premix

Ingredients

麵粉、玉米澱粉、葡萄糖、糖、玉米糖膠、植脂油粉(棕櫚油、葡萄糖漿、乳蛋白、磷酸氫二鉀、二氧化矽)、奶粉、鹽、馬鈴薯澱粉、醱粉(酸性焦磷酸鈣、碳酸氫鈉、小麥澱粉、磷酸二氫鈣)、牛奶香料。

 

Application

1.Preheat the fry pan (using electric hot plate please set temperature 170 ℃).
2.Mix water 30g, whole egg 80g, honey 10g with the whisk to stir quickly until small bubbles appear.  
3.Add Pancake Mix 100g and stir it well. 
4.Pour paste into the fry pan and cook until bubbles come out from the surface and cook the other side. Check if both sides are nicely browned.

 

 

Skill

1.If there is no scale at home, it can also be measured in other ways.
Pancake premix 100g is about 4/5 bowl, 80g of egg is about 1/2 bowl. You can also use measure cup to measure 30 g of water and 10 g of honey.
Reminder: This method is simple and convenient. Although there are some differences in the taste, it is still delicious.
2.Stir the batter to be a bit thick and not too watery but can still be flowed. If not, it may be added too much pancake premix or less the water. 
3.Although there are gas stoves in the house, it can also be made by induction cooker! However, it should be noted that the Induction Cooker have the fire only in the middle so pay attention to sauté. 
4.Since it may be sticky on the fry pan, you can brush a little oil in the fry pan previously so that it will be easier when flipping the pancake over.  
5.You can also replace water with milk so that the pancake’s taste will be more tasty and delicious.

Q&A

Q1.How can I know if the batter is mixed well?
A1. As long as the mixing cannot see the eggs, honey, water and pancake premix, and then become a beige batter.

Q2. How do you know when to flip the pancake?
A2. Do not only see a small bubble and flip it immediately. The first side of the pancake cooks, bubbles start from the surface of the exposed side -- first along the edges and then in the middle. When the bubbles start forming in the middle, flip the pancake.

Q3. Do you use round molds when making pancake?
A3. Whether to use the mold or not depends on personal preferences. If you would like to use the mold to make the pancake’s shape, it will look better. However, although the shape may not look so good when using the spoon, the size can be easier to adjust.
 
Q4. For the Eggs, should they be at room temperature? Or they can be used directly when being taken out from the refrigerator?
A4. Both are good, but the egg pulp will be better to use.
