Mochi Bread Premix

Mochi Bread is a kind of snack with crispy layer and chewy texture. It can be made in small pieces so that it looks cute and portable. 

Mochi bread premix is easy to make without fermentation. You can also make the product with variations, such as adding red beans, chocolate chips or sesame seeds. You can also create your own shape.

Ingredients

Hydroxypropyl starch, sugar, flour, whole milk powder, baking powder (calcium dihydrogen pyrophosphate, sodium bicarbonate, wheat starch, calcium phosphate monobasic), salt, wheat starch, emulsifier(sodium stearyl 2-lactylate, glycerin fatty acid ester), soy flour, citric acid

Application

Mochi Bread Premix 100g
Egg 17g
Butter 25g
Water 55g

 

 

1. Whisk Mochi bread premix, butter, eggs and water properly.
2. Take appropriate amount of dough and knead it to the size as a table-tennis ball, and then place it into the oven. 
3. Baking for about 25 minutes.
 

Skill

Since the dough is viscous, it is recommended to use a scraper when mixing all the materials. If you use egg whisk to stir the materials, it will not be convenient. 
Since the dough is a bit sticky, you can use an ice cream scoop or a spoon to dig it and place it on the baking tray.
The prepared biscuit dough can be flattened to about 0.5 cm by using your palm or a rolling pin. Then, the dough can be molded by particular molds or you can create any shape you like on your own.
Since the bread would double in size when baking, so please note the distance of each piece of dough on the baking tray to prevent them from sticking together.
If you want to have a soft texture of bread, you can add water about 5~10g.

Q&A

How do I know the ingredients are stirred well?
The batter will turn into dough shape and you won’t see the egg, butter, water and premix.  


Which kind of butter should I use?
You can use solid butter (Suggestion: using unsalted butter).


What can I do if the butter is too hard?
Our suggestion is that you can use the microwave, oven or double-boiler to melt the butter first.


For the eggs, should they be at room temperature? Or can they be used directly when being taken out from the refrigerator?
You can use eggs in the refrigerator but you have to beat the eggs first.


Why don’t we activate the heating source at the bottom of oven in the baking process?
In the baking process, the temperature of oven might be risen to above 130℃ when the temperature at the top of oven is 180℃. So, there is no need to activate the heating source at the bottom of oven. If you want to use the heating source at the bottom, you can set the temperature at 140℃~160℃. But the mochi bread will become darker at the bottom.
